Great Lakes Chewy Granola Bars
Soft and sweet, chewy and delicious, these homemade granola bars take the cake... as in who needs cake! Made with health-conscious ingredients you can feel good about serving these to your kids or save for yourself. This recipe can also be easily modified to use different nuts based on your family's preferences.

Time: 1 hour
Ingredients:
Bar:
1 tbsp Great Lakes Beef Gelatin
1/4 cup room temperature water
1/2 cup maple syrup
1/4 cup coconut oil
1 1/2 cups almonds or walnuts, chopped
1 cup oat flour
1/4 cup pecans
1/2 cup shredded coconut
2 tbsp hemp hulls
1/4 cup cacao nibs
1 tsp cinnamon
1/2 tsp sea salt
Chocolate Drizzle:
1/4 cup chocolate chunks or chips
1/2 tsp coconut oil
Directions:
Heat oven to 180 degrees and prepare and 8 or 9 inch square baking dish by lining with baking paper
In a large bowl stir the gelatin and water together until well mixed, let sit for 3 minutes
In a medium bowl, melt the coconut oil and maple syrup together
Carefully pour hot maple mixture into the bowl with gelatin and whisk well
Add all remaining ingredients to the bowl and stir until everything is well coated
Pour into prepared baking dish and using a rubber spatula press the mixture into the pan to create an even layer
Bake for 20 minutes or until top is crisp and brown all over
Remove from oven and let cool for a few minutes, then move baking dish to fridge to cool completely.
Once cool, remove from the fridge and slice into desired bar shapes, place on baking paper or a plate
Melt chocolate in a small bowl over a double boiler or in short bursts in the microwave. Once chocolate is melts, add the coconut oil and stir well until everything is shiny and smooth. Drizzle chocolate over granola bars and place back in the fridge to set
Once chocolate has hardened store finished bars in the fridge or freezer.
